For the chicken salad, we just chopped up some store bought already cooked chicken breast; you could use a rotisserie chicken, canned chicken, or leftover chicken. Any of those would be good. We then added corn and black bean salsa, some sour cream, and some shredded cheese to the bowl. We just mixed in enough sour cream to cut the heat of the salsa (which was a bit spicy). If you just have regular salsa, you could add some thawed frozen corn and some drained canned black beans. Chopped up peppers would be good in this too. I put in some scoops chips so the girls could make their own mini tacos at school Soft corn or flour tortillas would also be good.
Vivian: I didn’t like the big chunks of chicken in this. Next time, we should try shredding the chicken or chopping it into smaller pieces.
Charlotte: I didn’t like the sour cream in it. It made it all yucky. We should try again without the sour cream.
